How long will the assessment process take? The file will now be sent by the Ministry of Foreign Affairs to Unesco and the evaluation process will begin.
From pasta to tortellini, from "pizza alla parmigiana" and from dad's tiramisu! Italian cuisine is the official candidate of the Italian government to be part of the UNESCO World Heritage with the proposal of the Ministers of Agriculture Francesco Lollobrigida and Culture Gennaro Sangiuliano. And the National Commission unanimously approved it. A wealth and variety of food and wine like the Italian one, a real monument that is the envy of most of the world, is really surprising, underlines the minister Francesco Lollobrigida, that it happened so late, in 2023. The file will now forwarded by the Ministry of Foreign Affairs to Unesco and the evaluation process will begin, which may end a little later than December 2025.
Italian cuisine is defined, in the official candidacy file for UNESCO's intangible cultural heritage list, as a set of practices, rituals and social gestures based on the many local knowledges which, without hierarchy, identify and define it.
This mosaic of traditions reflects the country's biocultural diversity and is based on the common denominator of conceiving the moment of preparing and eating a meal as an opportunity to talk about oneself and discuss with others.
"There is a kind of Italian system. For example, there is the "Villa Verdi" foundation that is being set up to manage Verdi's residence, the park where concerts can be organized, Verdi's birthplace and the Busseto theater. One of the strong points is the gastronomic context of that area. (In important restaurants where you have to book up to a year in advance to go).
So the attraction will be Verdi, but without the food and wine component this attraction cannot work. This means creating a system", says Minister Sangiuliano.
He adds that he will have great support from him, because Italian cuisine means promoting the idea of the quality of life and the Italian lifestyle that consists of art, culture, landscapes, monuments, but also experiences such as the taste of food. Sangiuliano admits that he is happy to act as a "follower" of Minister Lollobrigida in this "adventure".
"We are going to bring two iconic Italian paintings like Caravaggio's Bacchus and Guido Reni's Bacchus and put them next to each other because it has never been possible to make a visual comparison."
"Without taking anything away from Mexican, French, Japanese and Korean cuisine, I believe that Italian cuisine has no rivals and that perhaps it was a problem that until now we have not had the strength and ability to promote," says Lollobrigida.
Italian cuisine is defined, in the official candidacy file for UNESCO's Intangible Cultural Heritage List, as a set of practices, rituals and social gestures based on a wealth of local knowledge.
As for Italian cuisine, he explains, we have to see it from another perspective: "from the producer to the farmer to the processor, the one who supplies us with the elements that end up in the kitchen and our chefs who transform it into a precious product in the table. It is the moment to show Italian cuisine to the whole world".
"Today we are starting a match that sees 140 million Italians take the field, 60 million who live in Italy, but also 80 million who live abroad. And also all the foreigners who love our food", concludes Gianmarco Mazzi, Undersecretary of the International Museum at Unesco.
